Vilmart et Cie Ratafia de Champagne 75cl

Vilmart et Cie Ratafia is composed of 100% Pinot Noir (grape must) classified Premier Cru that has had the alcoholic fermentation blocked by an alcohol 'fine' of champagne. Following the manual harvest in 2009, this Ratafia has aged in wooden barrels for five years. The nose is fresh with candied fruit flavours leading to ginger-bready hints and a fresh, elegant palate with incredible aromatic length.

Grape: Pinot Noir
Aromas of fresh cherry and candied citrus on the nose leading to ginger-bread notes and bitter orange marmalade. The palate is elegant and long with fig, pineapple, mocha and blood orange characters. The finish is concentrated with extremely aromatic notes almond, fig and hazelnut.
Pairs extremely well with pan-fried liver or strongly flavoured cheeses. Also recommended for dessert with tarte-tatin or chocolate mousse.

Note: This is a still fortified wine and not a champagne. (Ratafia is an ancestral method of preserving fruit juice in the same way that salting was used to preserve meat. Soléra is an ancestral method of maturing and gradually assembling different vintages, generally used for the great Port wines). This style of wine is like tasting an insight into very old mature Vintage Champagnes. A delightful pleasure.
