Whisky and whiskey are both distilled spirits made from fermented grain mash and aged in wooden containers, with the spelling difference primarily indicating geographical origin. Generally, "whisky" (no 'e') is used for Scotch, Canadian, and Japanese, while "whiskey" (with an 'e') is used for Irish and American spirits, both words derive from the Gaelic uisce beatha, meaning "water of life".
Scotch whisky made in Scotland, usually aged in oak for at least three years, is mainly malted barley, peated and distilled in pot stills. Irish whiskey is triple-distilled, while American whiskey, like bourbon, relies heavily on at least 51% corn and aged in new charred oak barrels. The "e" was largely adopted by Irish and American distillers in the 19th century to distinguish their products from Scotch whisky.
