Ayala Champagne Cuvée Perle d'Ayala 2012 Champagne is the jewel in the Ayala crown, and what a superb year in Champagne. This is the Special Edition presented in a Black Wooden Gift box.
Prestige cuvée Perle is a blend of 80% Chardonnay and 20% Pinot Noir, all the grapes having been selected from Grand Cru and Premier Cru villages.
2012 La Perle Grand Cru Champagne from Ayala is made with a blend of 80% Chardonnay and 20% Pinot Noir grapes, and matured on the lees for eight years before bottling. Aromas of clove-studded orange, gingerbread, vanilla, soft tobacco and hazelnut fill the nose, complemented by notes of menthol and baked apples on the palate. Dosage 6 g/l.

Cuvée Perle is an exclusive blend of 80% Chardonnay and 20% Pinot Noir, with the grapes having been selected from Grand Cru villages, all of which are rated 100% on the Échelle des Crus scale. It is aged in the House’s cellars for an average of 8 years under cork which allows perfectly controlled maturation and ensures the development of a very delicate, complex and aromatic style that immortalises the House style and truly reflects the quintessential Champagne terroir.

On the palate the Perle D’Ayala shows precise notes of custard and dried fruit. The finish is fine and long and marked by delicate spice.
