Akashi-Tai Junmai Ginjo Sparkling Sake is an innovative type of sake. It combines traditional sake brewing methods with Champagne-style secondary fermentation techniques to produce the sparkle. Citrus fruit flavours and floral undertones make this drink light and refreshing. It is crisp and slightly sweet, similar to several popular Italian sparkling wine varieties. 

This is a "pure" rice sake, according to the Junmai classification, as opposed to an Honjozo style where brewer's alcohol is added during fermentation. Ginjo means that at least 40% of the outer layers of the rice are polished away prior to production to produce a more complex and delicate flavour than standard sakes, where only 30% of the outer layers are removed.
