Billecart Salmon Le Clos Saint-Hilaire 2003 Blanc de Noirs Champagne 75cl was named after the patron saint of the church in Mareuil-sur-Ay. The Le Close Saint-Hilaire champagnes are a true gem as no more than 3,500 to 7,500 bottles are produced each year and each is individually numbered.
Made only from Pinot Noir vinified in oak casks, it develops an outstanding purity. Billecart-Salmon decided to add very little alcohol, or dosage, after disgorgement in order to let the typicality of the single grape used to make this great wine evolve.

On the nose, this champagne is beautifully aromatic, elegant and complex with notes of candied citrus, light tobacco and hints of hazelnut and almond. The palate is soft with flavours of panettone, puffed buckwheat, fresh quince and pear. The finish is long with an attractive saline character, minerality and a rooty essence.
In terms of pairings, I would propose a soupions stir fry with roasted ceps, dried fruits, Solliès figs and a blackberry vinaigrette! The ceps reflect the woody aromas and the chestnut aspects that are present.
