Cattier Premier Cru Clos du Moulin Champagne 75cl
Cattier Premier Cru Clos du Moulin Champagne is a blend of 50% Pinot Noir and 50% Chardonnay grapes, multiple vintages made exclusively from grapes picked on the Clos du Moulin parcel b (2.20 hectares) near Chigny Les Roses. This cuvée is always made from three vintages selected for their quality and ageing capacity.
The blend is a slightly coppery golden colour. A discreet, delicate nose. Subtly vinous with unobtrusive strength. Red berry, fresh butter and brioche aromas. A full, long finish. Dosage 10 grams of sugar per litre. Serving Temperature 8 to 10°C with outstanding laying-down potential. Production from each cuvée is approximately 15,000 bottles, and all are numbered.

Clos du Moulin is 2.2-hectare parcel in the village of Ludes. The vineyard derives its name from a wooden windmill that used to stand on the property until 1789, when it was destroyed by fire. The mill was rebuilt in stone, and remained on the site up until the beginning of the 20th century. In 1981, Cattier planted half of the vineyard with chardonnay and when these vines came into production 3 years later, he pulled up the other half of the vineyard and replanted that half with pinot noir. In the early 1980s, Jean-Jacques Cattier created a special bottle for the Clos du Moulin printing on the back label the three years involved in that particular blend.
