Henschke Cyril 2021 Cabernet Sauvignon will be remembered as a standout of the decade. Produced in the Eden Valley region of Australia, the wine is made up of a blend of 99% Cabernet Sauvignon, with the final 1% coming from the Winery's Merlot.
Aged for 18 months in 92% aged French Oak, the 2021 vintage is magnificent to drink now, but is only going to get better with age.
Named after the legendary Cyril Henschke, it is a tribute to one of Australia’s outstanding winemaking pioneers, who was renowned for old-vine, single-vineyard, and quality varietal table wines. First produced as a single-vineyard wine in 1978, Cyril Henschke Cabernet Sauvignon celebrates the incredible beauty that emerges from the vibrant rows of this Eden Valley vineyard, revered for its texture, depth, complexity and fine-grained tannins.

'19+ points. It has been clear for a few years that 2021 is a superb vintage, and it has been worth the wait for this exultant set of wines. I love Cyril, and this stunning 2021 takes up its position in Australia’s great pantheon of Cabernets because of its sheer quality, detail, and glittering uniqueness. No other wine tastes like it, making it an essential part of any Cabernet lover’s repertoire. North facing and late-ripening, the 2021 vintage romanced this vineyard, encouraging it to give its best possible fruit, and this has resulted in an even more fragrant wine than usual with heady violets, cassis, plums and even more exotic floral breeds than I have encountered, before in this noble wine. Gorgeous, silky tannins, give it the air of a relaxed and welcoming wine. But don’t be seduced by the apparent genial and approachable air. Of course, this is an elegant and controlled wine akin to a St-Julien-flavoured Pomerol (if there is such a thing). Yet, this flavour and texture could only come from the Eden Valley’s unique climate and Prue’s tremendously delicate viticulture. 2021 was exceptional for Cabernet. The lead-up to vintage was cool, cloudy and mostly dry. After the coolest summer for 19 years, a warm autumn provided ideal conditions for ripening in our red varieties, achieving excellent colour, flavour intensity and tannin maturity. The 2021 vintage will be considered a standout of the decade; remembered for complex wines with exceptional varietal expression, balance and purity, that speak of the ancient land from which they originate. With a likeness to the high-quality vintages of 1986 (most alike), 2002, 2005, and 2015, all of which were mild seasons, the 2021 single-vineyard wines show an impressive potential for long-term ageing in ideal cellaring conditions.

On the nose, the wine boasts spicy, perfumed aromas of blackcurrant, violet, anise and cedar, with black olive and bay leaf. The palate is bright and vibrant with complex layers of cocoa, cedar and sandalwood. Balanced acidity provides freshness and structure to the plush fruit, which is framed by elegant tannins. The finish is long and seamless.
The Henschke Cyril 2021 Cabernet Sauvignon, with its rich and intense flavour profile, would pair well with bold, savoury dishes such as grilled or roasted red meats like steak, lamb, or venison. It would also pair well alongside dishes with hearty sauces and rich cheeses.
