Dandelion Lion’s Tooth of McLaren Vale Shiraz-Riesling 2021 is the venture of Zar Brooks and his wine-making wife Elena, with wines from the Barossa and Eden Valleys, Fleurieu and McLaren Vale. Made up of a blend of 95% Shiraz and 5% Riesling.
The vineyard encourages the growth of dandelions as they suppress winter weeds and provide mulch in the summer. The Shiraz grapes were hand-harvested and whole-bunch fermented with stalks and placed in open fermenters to sit on top of the Riesling skins for 11 days. The wine remained in the barrel for 18 months before being racked and bottled without filtration or fining.

'94 points. Hand picked Shiraz from a propitious site, whole-bunch fermented on Riesling skins for 11 days before 16 months in French oak, mostly used. A quirky meld, perhaps, but it makes complete sense and works very well. Distinctive aromas of iodine, blood, smoked charcuterie and tapenade, along with grapey spice. Gritty, pointed and fine. So much more interesting than the simple, pulpy iterations that pervade the landscape. Grape: Riesling, Shiraz
The wine is deep red in colour with youthful violet hints. On the nose, aromas of rose petals, lifted red fruits and hints of lime marmalade are present. On the palate, there are notes of wild cherries, blueberries and balanced spicy oak with velvet tannins.
