Once destemmed, the berry fruit undergoes several days of cold maceration. The fermentation temperatures are kept low and is conducted with free run juice using natural yeasts ensuring a soft gentle extraction. Finally, the wine undergoes spontaneous malolactic fermentation in barrel and is naturally clarified through several rackings.
