Pazos de Lusco Albariño is a pristine example of white wine from Rías Baixas in Northern Spain. Hand-harvested grapes are handled gently, and undergo sorting in the winery to eliminate any damaged bunches. Native yeasts are used for fermentation, and after this, the wine is allowed to age on lees to develop extra complexity without compromising freshness.
