Drappier Permission Coteaux Champenois is produced from 100% Pinot Noir Grapes from the polt, Les Egrillers which is certified organic. Grapes taken from the 2018 harvest are macerated for 14 days then placed in French oak barrels to be aged for 2 years. As a Coteaux-Champenois the wine keeps without the need for sulfites. When the Drappier vineyards were first planted in 1808 the family were producing red and white still wines, Michel Drappier predicts with the effects of climate change, Champagne will see a Burgundy-like still wine future.
