The 2013 growing season proved to be a much-welcomed reminder of glorious late vintages of the past. An extremely rainy and grey Spring followed a cold, wet Winter. Fortunately, the hot and dry Summer was one of the sunniest on record in the Champagne region and proved very beneficial for the quality of the grapes. The harvest at Dom Perignon ran from the 28th of September to the 15th of October and revealed a perfect balance between being full-bodied and acidic.
The nose is delicate and unfolds to reveal deeper aromatic layers. Notes of green eucalyptus, mint and Mirabelle plums make way for further aromas of apricot, orange blossom, and pepper on the finish. The palate is elegant and expresses a luxurious precision. A refined, silky foundation becomes more pronounced to reveal a finish that is dominated by salinity and consistency.
Dom Pérignon Vintage 2013 Champagne makes the perfect pairing with rich fish such as salmon or seared tuna, or alongside a pork-based dish such as braised pork in a ginger glaze.
