The Tio Pepe Palomino Fino Sherry is bone dry and wonderfully complex. The Palomino grapes are pressed using pneumatic presses without crushing the stems, seeds or skins. After fermentation in stainless steel tanks, classification and fortification the wine is added to the Tio Pepe solera where it will age for at least 4 years in American oak barrels after the traditional Solera system.
