Paddy Borthwick prides himself on sustainable practices with minimal intervention so each wine can showcase their single vineyard characteristics and flavour.
Their Riesling is picked and pressed quickly for a slow, cool fermentation which is stopped once they feel they have the perfect balance between sweetness and acidity.
