Gonzalez Byass Solera 1847 Oloroso Cream Sherry is a delicious blend of Oloroso sherry blended with some luscious Pedro Ximénez. The Oloroso and Pedro Ximénez are aged in separate soleras for 4 years before being blended (75% Oloroso 25% PX) and aged for a further 4 years.
This is a far cry from sickly cream sherries that did much to diminish the reputation of this historic category of fortified wines. There are aromas of raisins, dates, marmalade, wood and caramel. On the palate, there is sweetness but so much intensity and complexity to carry it. This goes equally well with cheesey Christmas savouries as it does with mince pies and dried fruits. A festive must-have!
