Casale dello Sparviero Chianti Classico is an authentic expression of Chianti, providing a savoury and structured red wine that is at its best with food. It is a blend of organically grown 95% Sangiovese and 5% Canaiolo, therefore only traditional grape varieties are used. Tradition and modernity combine in the winery: temperature-controlled vats are used for fermentation, ensuring optimal extraction of delicate aromas and tannins. Ageing lasts for 12 months in huge 50hl Slavonian oak barrels and a further 6 in the bottle before leaving their cellars.

A nose of fresh, wild red berries, with some earthy spice, savoury herbs and old leather. The palate is medium-bodied and has plenty of fine-grained tannin. A juicy acidity contributes freshness to the wine.
This can work well with red meat, robust white meat dishes, hearty mushroom dishes and hard cheeses.
