Taittinger Comtes de Champagne Blanc de Blancs 2007 is produced in the cellars of the former Saint-Nicaise abbey (13th century) in Reims, Taittinger Comtes de Champagne Blanc de Blancs receives all the lavish care and attention it needs to reach its peak. Every bottle is made entirely from Chardonnays from only the best vines in the prestigious Côte des Blancs. It is only produced when the harvest is of exceptional quality worthy of a vintage year.
Only the wine from the first press – the Cuvée – is used: a sure guarantee of finesse. 5% of the wines used to make it have been aged for 4 months in new oak barrels (a third of which are renewed every year), enhancing the intrinsic qualities and complexities of the final blend. Only after slow and patient ageing for 8 to 10 years in the Saint-Nicaise chalk pits (Crayères) does this cuvée of exceptional quality come out into the light.Read more...

Compact and dense, but at the same time it’s pretty and delicate. There’s a touch of grapefruit and a refined spiciness, as well as riper notes of apricot and peach. But the main theme here is beautifully focused, pure citrus fruit. Just beautiful."
The Comtes de Champagne Blanc de Blancs is the finest example of the Taittinger House style and is always a vintage cuvée. It is made with 100% white grapes from the 5 villages with a Grands Crus classification for the Chardonnay grape (Avize, Chouilly, Cramant, Oger, Mesnil-sur-Oger).
The ’must-read’ legend of the ‘Comtes de Champagne’ (Counts of Champagne) from the 16th century is a marvellous narrative of an assumed reality, combined with the storyteller’s imagination and poetry. Its relevance today is not so much down to its historical accuracy; it is more an emotional tale, with new adaptations which continue to flourish to this day. The flamboyant legend of Thibaud IV le Chansonnier is very much connected to the unique Comtes de Champagne blend by Taittinger.
