Taittinger Comtes de Champagne Blanc de Blancs 2007 is produced in the cellars of the former Saint-Nicaise abbey (13th century) in Reims, Taittinger Comtes de Champagne Blanc de Blancs receives all the lavish care and attention it needs to reach its peak. Every bottle is made entirely from Chardonnays from only the best vines in the prestigious Côte des Blancs. It is only produced when the harvest is of exceptional quality worthy of a vintage year.

Only the wine from the first press – the Cuvée – is used: a sure guarantee of finesse. 5% of the wines used to make it have been aged for 4 months in new oak barrels (a third of which are renewed every year), enhancing the intrinsic qualities and complexities of the final blend. Only after slow and patient ageing for 8 to 10 years in the Saint-Nicaise chalk pits (Crayères) does this cuvée of exceptional quality come out into the light.

It shows subtle depth and power with a dense block of vivid fruit that's highlighted with lemon zest, green apples and hints of white peaches. Just the right amount of praline and nuts on the nose. Awarded 98 points by Jamie Goode "This is quite beautiful. There’s lovely concentration of citrus fruit with some subtle hazelnut and toast, as well as good structure and fine acidity. Compact and dense, but at the same time it’s pretty and delicate. There’s a touch of grapefruit and a refined spiciness, as well as riper notes of apricot and peach. But the main theme here is beautifully focused, pure citrus fruit. Just beautiful."

Grape: Chardonnay
The 2007 was an exceptional year in terms of both the vines and the final wine. After a mild winter, and with the unusually warm temperatures, during May the vineyards in Champagne suffered awful weather. These conditions interfered with the vines’ flowering period, resulting in great diversity across the region and full bloom only being achieved between the 24th of May and 1st of June. The grapes matured a little slower as a result of a mostly cold and gloomy summer. Thankfully at the end of August came the return of the sun and with it hope, as the fruit began to mature perfectly. Harvesting did not start until the 30th of August and was carried out under a cold, dry wind. This resulted in a healthy, good quality crop. The Chardonnay grapes were delicate and clear, and their citrus and white fruit aromas showed great potential.
The typical colour of the Chardonnay is present, its golden and shiny dress is crossed by a cord of fine and persistent bubbles. Its delicate nose is a soft mixture of white flower and minerality with generous aromas of Anjou pear and dry white grapes. To this fruity perception comes the addition of aniseed and smoked touches. In the mouth, the attack is lively, with an alliance of flavours of yellow lemon and salinity.A sensation of freshness, complex and suave, a perfect balance between maturity and roundness. The finale turns out to be a beautiful long finish, tart, in tension and adorned with sweet notes of salty butter. A true memory of time, the freshness of this Comtes de Champagne foreshadows all the potential for ageing that is expected of such a cuvée.
Perfect for a truly special celebration, this Champagne would also go very well with a starter based on seafood, shellfish or fish.

The Comtes de Champagne Blanc de Blancs is the finest example of the Taittinger House style and is always a vintage cuvée. It is made with 100% white grapes from the 5 villages with a Grands Crus classification for the Chardonnay grape (Avize, Chouilly, Cramant, Oger, Mesnil-sur-Oger).

The ’must-read’ legend of the ‘Comtes de Champagne’ (Counts of Champagne) from the 16th century is a marvellous narrative of an assumed reality, combined with the storyteller’s imagination and poetry. Its relevance today is not so much down to its historical accuracy; it is more an emotional tale, with new adaptations which continue to flourish to this day. The flamboyant legend of Thibaud IV le Chansonnier is very much connected to the unique Comtes de Champagne blend by Taittinger.
