St. Lucia Distillers 1931 Rum Fourth Edition celebrates the inauguration of a new distillery in February 1931 in the Mabouya Valley, near Dennery, in St. Lucia. The Distillery was founded by Denis Barnard and the distillery produced rum until 1972 when St. Lucia Distillers was firmed out of the merging of the Dennery Distillery and the Roseau Distillery. This 1931 4th edition rum honours the history and St. Lucia Distillers’ commitment to would class handmade rums, which has now lasted 83 years. 1931 is a blend of maturates aged from distillates from St Lucia’s three pot stills and their Coffey still. They are specifically selected for their complexity, harmony, and balance. The blend of the fourth edition contains a six-year-old rum agricole- the first such rum to be made in Saint Lucia since the 1930. St Lucia distillers planted specially selected can eight years ago, and the crush was fermented with natural yeast and distilled in a 423 litre batch utilizing their John Dore pot still. St Lucia Distillers firmly believe that the addition of this sugarcane rum adds an aromatic and sweet dynamic to the final rum and is the culmination of their goal to produce both molasses and cane juice based rums.
